Ingredients

  • 2 cups Rolled oats
  • 1 cup Mashed bananas about 2-3 bananas
  • 1 cup Milk
  • 1 large Egg
  • ¼ cup Honey
  • 1 teaspoon Vanilla extract
  • 1 teaspoon Baking powder
  • ½ teaspoon Baking soda
  • ½ teaspoon Salt

Instructions 

  1. Preheat the oven to 350°F (175°C). Line a muffin tin with paper liners or grease it lightly.
  2. In a large mixing bowl, combine the oats, mashed bananas, milk, egg, honey, and vanilla extract. Mix well.
  3. Add the baking powder, baking soda, and salt to the mixture. Stir until just combined.
  4. Divide the batter evenly among the muffin cups.
  5. Bake for 20 minutes or until a toothpick inserted into the center of a muffin comes out clean.
  6. Let the muffins cool in the tin for 5 minutes, then transfer to a wire rack to cool completely.
