Basque Codfish Stew Recipe
A hearty and flavorful Basque-style codfish stew.

Main Ingredients
- 500 g Salted codfish soaked overnight and drained
- 2 tablespoon Olive oil
- 1 Onion finely chopped
- 2 Garlic cloves minced
- 1 Red bell pepper chopped
- 1 Green bell pepper chopped
- 400 g Tomatoes chopped
- 2 cups Fish stock
- 1 teaspoon Paprika
- 1 teaspoon Salt to taste
- 1 teaspoon Black pepper to taste
- 2 tablespoon Chopped parsley for garnish
1. Heat the olive oil in a large pot over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the chopped bell peppers and cook for another 5 minutes.
4. Stir in the chopped tomatoes and cook until they start to break down.
5. Pour in the fish stock, add the paprika, salt, and black pepper. Bring to a simmer.
6. Add the soaked and drained codfish to the pot. Simmer gently for 20 minutes.
7. Garnish with chopped parsley before serving.
