Ingredients 

Main Ingredients

  • 3 lbs Beef chuck roast
  • 2 cups Beef broth
  • 5 Dried guajillo chiles stemmed and seeded
  • 3 Dried ancho chiles stemmed and seeded
  • 1 White onion quartered
  • 4 cloves Garlic
  • 1 teaspoon Dried oregano
  • 1 teaspoon Ground cumin
  • 2 teaspoon Salt
  • 1 teaspoon Black pepper
  • 3 Bay leaves

Instructions 

  1. 1. Preheat oven to 350°F (175°C).
  2. 2. In a large pot, add beef broth and bring to a boil. Add guajillo and ancho chiles, and simmer until softened, about 10 minutes.
  3. 3. Transfer chiles and broth to a blender. Add onion, garlic, oregano, cumin, salt, and black pepper. Blend until smooth.
  4. 4. In the same pot, add beef and pour the blended sauce over it. Add bay leaves. Cover and cook in the oven for 3 hours, until beef is tender.
  5. 5. Remove beef from the pot and shred. Serve with the sauce.
