Ingredients 

Main Ingredients

  • 4 lbs beef short ribs bone-in
  • 2 tablespoon olive oil
  • 1 large onion chopped
  • 3 cloves garlic minced
  • 2 cups beef broth
  • 1 cup red wine
  • 2 tablespoon tomato paste
  • 2 sprigs rosemary
  • 2 sprigs thyme
  • to taste salt and pepper

Instructions 

  1. Preheat your oven to 325°F (163°C).
  2. Season the short ribs with salt and pepper.
  3. Heat olive oil in a Dutch oven over medium-high heat. Sear the short ribs on all sides until browned. Remove and set aside.
  4. In the same pot, add the chopped onion and cook until softened. Add the garlic and cook for another minute.
  5. Stir in the tomato paste and cook for a couple of minutes. Pour in the red wine and beef broth, scraping up any browned bits from the bottom of the pot.
  6. Return the short ribs to the pot. Add the rosemary and thyme sprigs. Bring to a simmer.
  7. Cover the pot and transfer to the preheated oven. Cook for about 3 hours, or until the meat is tender and falling off the bone.
  8. Remove the pot from the oven. Let the short ribs rest for a few minutes before serving.
