Ingredients 

Main Ingredients

  • 2 lbs Beef Chuck cut into cubes
  • 2 tablespoon Olive Oil
  • 1 large Onion chopped
  • 3 cloves Garlic minced
  • 4 cups Beef Broth
  • 2 cups Carrots sliced
  • 2 cups Potatoes diced
  • 2 tablespoon Tomato Paste
  • 1 teaspoon Thyme dried
  • 1 teaspoon Rosemary dried
  • 1 to taste Salt
  • 1 to taste Black Pepper

Instructions 

  1. 1. Heat olive oil in a large pot over medium heat. Add beef and cook until browned on all sides. Remove beef and set aside.
  2. 2. In the same pot, add onions and garlic. Cook until onions are translucent.
  3. 3. Add beef back to the pot. Stir in tomato paste, thyme, and rosemary.
  4. 4. Pour in beef broth and bring to a boil. Reduce heat, cover, and simmer for 1 hour.
  5. 5. Add carrots and potatoes. Cook for another 30 minutes until vegetables are tender.
  6. 6. Season with salt and pepper to taste. Serve hot.
