Ingredients

  • 1 cup Rice
  • 1 can Black Beans drained and rinsed
  • 1 tablespoon Olive Oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 2 cups Water

Instructions 

  1. 1. Heat the olive oil in a pan over medium heat. Add the chopped onion and cook until translucent.
  2. 2. Add the minced garlic and cook for another minute.
  3. 3. Stir in the cumin, salt, and black pepper.
  4. 4. Add the rice and cook for a couple of minutes, stirring frequently.
  5. 5. Pour in the water and bring to a boil. Reduce the heat to low, cover, and simmer for 20 minutes or until the rice is cooked.
  6. 6. Stir in the black beans and cook until heated through.
  7. 7. Serve hot and enjoy!
