- 2 cups All-purpose flour
- 1 teaspoon Baking soda
- 0.5 teaspoon Salt
- 0.5 cup Unsalted butter, softened
- 1 cup Sugar
- 2 Large eggs
- 1 teaspoon Vanilla extract
- 4 Ripe bananas, mashed
- 1 cup Fresh blueberries
Preheat your oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a mixing bowl, whisk together the flour, baking soda, and salt. Set aside.
In another bowl, cream the butter and sugar together until light and fluffy. Add the eggs one at a time, beating well after each addition. Stir in the vanilla extract and mashed bananas.
Gradually add the dry ingredients to the banana mixture, mixing just until combined. Gently fold in the blueberries.
Pour the batter into the prepared loaf pan. Bake for 60 minutes, or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
