- 1 cup Bran Cereal
- 1 cup Buttermilk
- ⅓ cup Vegetable Oil
- 1 Egg beaten
- ½ cup Brown Sugar packed
- 1 teaspoon Vanilla Extract
- 1 cup All-Purpose Flour
- 1 teaspoon Baking Powder
- ½ teaspoon Baking Soda
- ½ teaspoon Salt
- ½ cup Raisins
Preheat your oven to 375°F (190°C). Grease a muffin tin or line with paper liners.
In a large bowl, combine the bran cereal and buttermilk. Let it sit for 10 minutes to soften.
Add the vegetable oil, beaten egg, brown sugar, and vanilla extract to the bran mixture. Stir until well combined.
In another bowl, whisk together the flour, baking powder, baking soda, and salt. Gradually add the dry ingredients to the wet mixture, stirring just until combined. Fold in the raisins.
Divide the batter evenly among the muffin cups, filling each about ⅔ full.
Bake for 18-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean. Allow to cool in the tin for a few minutes, then transfer to a wire rack to cool completely.
