Ingredients 

Main Ingredients

  • 1 large butternut squash peeled, seeded, and cubed
  • 1 onion chopped
  • 2 cloves garlic minced
  • 4 cups vegetable broth
  • 1 cup heavy cream
  • to taste salt
  • to taste black pepper

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Add the chopped onion and garlic, and sauté until softened.
  2. 2. Add the cubed butternut squash to the pot and cook for a few minutes, stirring occasionally.
  3. 3. Pour in the vegetable broth and bring to a boil. Reduce the heat and let it simmer for about 30 minutes, or until the squash is tender.
  4. 4. Use a blender to puree the soup until smooth. Return the soup to the pot.
  5. 5. Stir in the heavy cream and season with salt and black pepper to taste. Heat through but do not boil.
  6. 6. Serve hot, garnished with a drizzle of cream or a sprinkle of herbs if desired.
