Ingredients 

Main Ingredients

  • 1 whole Chicken cut into pieces
  • 4 cups Chicken Broth
  • 2 whole Carrots sliced
  • 2 whole Zucchini sliced
  • 1 whole Onion quartered
  • 2 cloves Garlic minced
  • 1 bunch Cilantro chopped
  • 2 whole Corn on the Cob cut into pieces
  • to taste Salt
  • to taste Pepper

Instructions 

  1. In a large pot, add the chicken and cover with water. Bring to a boil and skim off any foam.
  2. Add the chicken broth, carrots, zucchini, onion, garlic, and corn. Simmer for about 45 minutes.
  3. Season with salt and pepper to taste. Add the cilantro and cook for another 15 minutes.
  4. Serve hot with lime wedges and warm tortillas on the side.
