Ingredients 

Main Ingredients

  • 2 lbs Beef shank with bone
  • 1 Onion quartered
  • 3 cloves Garlic minced
  • 2 Carrots cut into chunks
  • 2 Zucchini cut into chunks
  • 4 Potatoes cut into chunks
  • 1 Corn on the cob cut into pieces
  • 1 cup Cabbage chopped
  • to taste Salt
  • to taste Pepper
  • 1 Lime cut into wedges for serving
  • 1 bunch Cilantro chopped for garnish

Instructions 

  1. 1. In a large pot, add the beef shank and cover with water. Bring to a boil and skim off any foam that rises to the top.
  2. 2. Add the onion and garlic to the pot. Reduce heat and simmer for about 1 hour, or until the meat is tender.
  3. 3. Add the carrots, zucchini, potatoes, and corn to the pot. Continue to simmer for another 30 minutes.
  4. 4. Add the cabbage and cook for an additional 10 minutes. Season with salt and pepper to taste.
  5. 5. Serve hot, garnished with chopped cilantro and lime wedges on the side.
