Ingredients 

Main Ingredients

  • 1 kg Carrots peeled and chopped
  • 1 large Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Vegetable Broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black Pepper to taste
  • 1 tablespoon Olive Oil

Instructions 

  1. 1. Heat olive oil in a pot over medium heat.
  2. 2. Add chopped onions and garlic, sauté until soft.
  3. 3. Add carrots and vegetable broth. Bring to a boil.
  4. 4. Reduce heat and simmer for 20 minutes, until carrots are tender.
  5. 5. Use a blender to puree the soup until smooth.
  6. 6. Season with salt and pepper to taste. Serve hot.
