Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 onion, chopped
  • 1 red bell pepper, chopped
  • 3 cloves garlic, minced
  • 1 teaspoon ground cumin
  • 1 teaspoon paprika
  • 1 teaspoon ground coriander
  • 1 teaspoon chili powder
  • 400 g canned tomatoes
  • 4 eggs
  • to taste salt and pepper
  • 2 tablespoon fresh parsley, chopped

Instructions 

  1. Heat olive oil in a skillet over medium heat.
  2. Add chopped onion and bell pepper, cook until softened.
  3. Add minced garlic and spices, cook for another minute.
  4. Add canned tomatoes, simmer for 10 minutes.
  5. Make wells in the sauce and crack eggs into them.
  6. Cover and cook until eggs are set, about 5 minutes.
  7. Season with salt and pepper, garnish with parsley.
