Ingredients 

Main Ingredients

  • 1 lb Chicken breast diced
  • 1 cup Rice
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 2 stalks Celery sliced
  • 6 cups Chicken broth
  • 1 teaspoon Salt to taste
  • ½ teaspoon Black pepper to taste
  • 1 teaspoon Dried thyme
  • 1 teaspoon Dried parsley

Instructions 

  1. 1. Heat a large pot over medium heat. Add a bit of oil and sauté the onion, garlic, carrots, and celery until softened, about 5 minutes.
  2. 2. Add the diced chicken breast and cook until no longer pink, about 5-7 minutes.
  3. 3. Pour in the chicken broth and bring to a boil.
  4. 4. Add the rice, salt, pepper, thyme, and parsley. Reduce heat and let it simmer for about 20 minutes, or until the rice is cooked through.
  5. 5. Adjust seasoning to taste and serve hot.
