Ingredients 

Main Ingredients

  • 1 cup wild rice
  • 2 cups cooked chicken, shredded
  • 1 medium onion, chopped
  • 2 cloves garlic, minced
  • 3 medium carrots, sliced
  • 3 stalks celery, sliced
  • 8 cups chicken broth
  • 1 cup heavy cream
  • to taste salt and pepper

Instructions 

  1. 1. In a large pot, cook the wild rice according to package instructions. Drain and set aside.
  2. 2. In the same pot, heat a bit of oil over medium heat. Add the onion, garlic, carrots, and celery. Cook until the vegetables are tender.
  3. 3. Add the chicken broth and bring to a boil. Reduce heat and let it simmer for about 20 minutes.
  4. 4. Stir in the cooked wild rice and shredded chicken. Let it simmer for another 10 minutes.
  5. 5. Stir in the heavy cream and season with salt and pepper to taste. Cook for an additional 5 minutes.
  6. 6. Serve hot and enjoy!
