Ingredients

  • 1 cup glutinous rice
  • 1 lb chicken thighs, bone-in
  • 1 piece onion, chopped
  • 4 cloves garlic, minced
  • 1 piece ginger, sliced
  • 6 cups chicken broth
  • 2 tablespoon fish sauce
  • to taste salt and pepper
  • 2 pieces hard-boiled eggs, halved for garnish
  • ¼ cup green onions, chopped for garnish
  • 1 piece lemon or calamansi, sliced for garnish

Instructions 

  1. 1. In a large pot, heat some oil over medium heat. Sauté the onion, garlic, and ginger until fragrant.
  2. 2. Add the chicken thighs and cook until they are no longer pink.
  3. 3. Stir in the glutinous rice and cook for a few minutes, ensuring the rice is well-coated with the aromatics.
  4. 4. Pour in the chicken broth and fish sauce. Bring to a boil, then reduce the heat and let it simmer, stirring occasionally, until the rice is fully cooked and the mixture has thickened, about 30-40 minutes.
  5. 5. Season with salt and pepper to taste. Serve hot, garnished with hard-boiled eggs, green onions, and lemon or calamansi slices.
