Ingredients

  • 2 tablespoon Olive Oil
  • 1 cup Onion, chopped
  • 3 cloves Garlic, minced
  • 1 cup Bell Pepper, chopped
  • 1 cup Corn
  • 1 can Black Beans, drained and rinsed
  • 2 cups Cooked Chicken, shredded
  • 4 cups Chicken Broth
  • 1 can Diced Tomatoes
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Salt
  • ½ teaspoon Black Pepper
  • 1 cup Tortilla Chips, crushed
  • ¼ cup Cilantro, chopped
  • 1 unit Lime, cut into wedges

Instructions 

  1. Heat olive oil in a large pot over medium heat.
  2. Add chopped onion, garlic, and bell pepper. Sauté until softened.
  3. Add corn, black beans, shredded chicken, chicken broth, diced tomatoes, chili powder, cumin, salt, and black pepper. Stir well.
  4. Bring to a boil, then reduce heat and let simmer for 20 minutes.
  5. Serve hot, topped with crushed tortilla chips, chopped cilantro, and lime wedges on the side.
