- 1.5 cups All-purpose flour
- 0.5 cup Cocoa powder
- 1 teaspoon Baking soda
- 0.5 teaspoon Baking powder
- 0.5 teaspoon Salt
- 2 cups Shredded zucchini
- 0.5 cup Vegetable oil
- 1 cup Granulated sugar
- 2 teaspoon Vanilla extract
- 2 large Eggs
- 1 cup Chocolate chips
Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan.
In a large bowl, whisk together flour, cocoa powder, baking soda, baking powder, and salt.
In another bowl, mix together shredded zucchini, vegetable oil, sugar, vanilla extract, and eggs.
Gradually add the dry ingredients to the wet ingredients, mixing until just combined. Fold in chocolate chips.
Pour the batter into the prepared loaf pan. Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
