  • 4 cups Corn kernels fresh or frozen
  • 1 cup Mayonnaise
  • 1 cup Cotija cheese crumbled
  • 2 tablespoon Chili powder
  • 1 cup Cilantro chopped
  • 2 tablespoon Lime juice freshly squeezed

Instructions 

  1. 1. Boil the corn kernels in a pot of water until tender, about 5-7 minutes.
  2. 2. Drain the corn and divide it into cups.
  3. 3. Add a spoonful of mayonnaise to each cup and mix well.
  4. 4. Top with crumbled Cotija cheese, chili powder, chopped cilantro, and a squeeze of lime juice.
