  • 500 g cooked chicken, shredded
  • 2 tablespoon curry powder
  • 100 g mayonnaise
  • 50 g Greek yogurt
  • 1 tablespoon lemon juice
  • 50 g dried apricots, chopped
  • 2 tablespoon mango chutney
  • to taste salt and pepper

Instructions 

  1. 1. In a saucepan, heat the curry powder for 1-2 minutes until fragrant.
  2. 2. In a mixing bowl, combine the mayonnaise, Greek yogurt, lemon juice, and mango chutney.
  3. 3. Add the curry powder to the mixture and stir well.
  4. 4. Fold in the shredded chicken and chopped dried apricots.
  5. 5. Season with salt and pepper to taste.
  6. 6. Serve chilled, either as a sandwich filling or over a bed of salad greens.
