Ingredients

  • 1 lb Mushrooms sliced
  • 1 medium Onion chopped
  • 2 cloves Garlic minced
  • 4 cups Chicken Broth
  • 1 cup Heavy Cream
  • 2 tablespoon Butter
  • to taste Salt
  • to taste Black Pepper

Instructions 

  1. 1. In a large pot, melt the butter over medium heat.
  2. 2. Add the chopped onion and minced garlic, and sauté until the onion is translucent.
  3. 3. Add the sliced mushrooms and cook until they release their juices and become tender.
  4. 4. Pour in the chicken broth and bring to a boil. Reduce heat and let it simmer for about 15 minutes.
  5. 5. Use a blender to puree the soup until smooth. Return the soup to the pot.
  6. 6. Stir in the heavy cream and season with salt and black pepper to taste. Heat through, but do not boil.
  7. 7. Serve hot, garnished with fresh herbs if desired.
