Ingredients 

Main Ingredients

  • 2 large eggplants sliced into ¼ inch rounds
  • 2 cups breadcrumbs Italian seasoned
  • 1 cup grated Parmesan cheese
  • 2 cups marinara sauce
  • 2 cups shredded mozzarella cheese
  • 2 large eggs beaten
  • 1 cup all-purpose flour
  • to taste salt
  • to taste black pepper

Instructions 

  1. Preheat oven to 375°F (190°C).
  2. Season eggplant slices with salt and let sit for 30 minutes. Pat dry.
  3. Dredge eggplant slices in flour, dip in beaten eggs, and coat with breadcrumbs.
  4. Fry eggplant slices in a pan with oil until golden brown. Drain on paper towels.
  5. In a baking dish, layer marinara sauce, fried eggplant, Parmesan, and mozzarella. Repeat layers.
  6. Bake for 20-25 minutes until cheese is bubbly and golden.
  7. Let cool for a few minutes before serving.
