Eggplant Parmesan Recipe

Main Ingredients
- 2 large eggplants sliced into ¼ inch rounds
- 2 cups breadcrumbs Italian seasoned
- 1 cup grated Parmesan cheese
- 2 cups marinara sauce
- 2 cups shredded mozzarella cheese
- 2 large eggs beaten
- 1 cup all-purpose flour
- to taste salt
- to taste black pepper
Preheat oven to 375°F (190°C).
Season eggplant slices with salt and let sit for 30 minutes. Pat dry.
Dredge eggplant slices in flour, dip in beaten eggs, and coat with breadcrumbs.
Fry eggplant slices in a pan with oil until golden brown. Drain on paper towels.
In a baking dish, layer marinara sauce, fried eggplant, Parmesan, and mozzarella. Repeat layers.
Bake for 20-25 minutes until cheese is bubbly and golden.
Let cool for a few minutes before serving.
