Main Ingredients
- 1 lb white fish fillets cut into bite-sized pieces
- 4 cups fish stock
- 2 cups heavy cream
- 2 potatoes peeled and diced
- 1 onion chopped
- 2 tablespoon butter
- 2 cloves garlic minced
- 1 teaspoon salt to taste
- ½ teaspoon black pepper to taste
- 1 tablespoon fresh parsley chopped, for garnish
1. In a large pot, melt the butter over medium heat.
2. Add the chopped onion and garlic, and sauté until softened.
3. Add the diced potatoes and fish stock. Bring to a boil, then reduce heat and simmer until potatoes are tender.
4. Stir in the heavy cream and bring back to a gentle simmer.
5. Add the fish pieces and cook until the fish is opaque and cooked through.
6. Season with salt and black pepper to taste.
7. Garnish with chopped fresh parsley before serving.
