Four Cheese Ravioli

Ingredients 

Dough

  • 2 cups All-purpose flour
  • 3 units Large eggs
  • 1 tablespoon Olive oil

Filling

  • ½ cup Ricotta cheese
  • ½ cup Mozzarella cheese, shredded
  • ¼ cup Parmesan cheese, grated
  • ¼ cup Fontina cheese, shredded
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper

Instructions 

  1. In a mixing bowl, combine flour and eggs. Add olive oil and mix until dough forms.
  2. Knead the dough on a floured surface for about 10 minutes until smooth. Wrap in plastic wrap and let rest for 30 minutes.
  3. In another bowl, combine all the cheeses, salt, and pepper for the filling.
  4. Roll out the dough into thin sheets. Place small mounds of filling on one sheet, cover with another sheet, and cut into ravioli shapes.
  5. Bring a large pot of salted water to a boil. Cook the ravioli for 3-4 minutes or until they float to the top.
  6. Drain and serve with your favorite sauce.
