Crepe Batter
- 1 cup all-purpose flour
- 2 tablespoon sugar
- ¼ teaspoon salt
- 3 eggs
- 2 cups milk
- 2 tablespoon butter, melted
- 1 teaspoon vanilla extract
In a mixing bowl, whisk together the flour, sugar, and salt.
In another bowl, beat the eggs and then add the milk, melted butter, and vanilla extract. Mix well.
Gradually add the wet ingredients to the dry ingredients, whisking until smooth.
Heat a non-stick skillet over medium heat. Lightly grease with butter or oil.
Pour about ¼ cup of batter into the skillet, tilting to spread evenly. Cook until the edges start to lift and the bottom is golden brown, about 1-2 minutes. Flip and cook the other side for another minute.
Repeat with the remaining batter. Serve warm with your favorite fillings.
