Ingredients 

Main Ingredients

  • 2 tablespoon olive oil
  • 1 medium onion, chopped
  • 4 cloves garlic, minced
  • 2 lbs fresh tomatoes, chopped
  • 2 cups vegetable broth
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ¼ cup fresh basil, chopped

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the chopped onion and cook until translucent, about 5 minutes.
  3. Add the minced garlic and cook for another 2 minutes.
  4. Add the chopped tomatoes and cook until they start to break down, about 10 minutes.
  5. Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
  6. Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
  7. Return the soup to the pot, stir in the fresh basil, and adjust seasoning if needed. Serve hot.
