Garden Fresh Tomato Soup
A simple, fresh tomato soup made from garden tomatoes.

Main Ingredients
- 2 tablespoon olive oil
- 1 medium onion, chopped
- 4 cloves garlic, minced
- 2 lbs fresh tomatoes, chopped
- 2 cups vegetable broth
- 1 teaspoon salt
- ½ teaspoon black pepper
- ¼ cup fresh basil, chopped
Heat the olive oil in a large pot over medium heat.
Add the chopped onion and cook until translucent, about 5 minutes.
Add the minced garlic and cook for another 2 minutes.
Add the chopped tomatoes and cook until they start to break down, about 10 minutes.
Pour in the vegetable broth, salt, and black pepper. Bring to a boil, then reduce heat and simmer for 15 minutes.
Remove from heat and let cool slightly. Blend the soup until smooth using a blender.
Return the soup to the pot, stir in the fresh basil, and adjust seasoning if needed. Serve hot.
