Main Ingredients
- 1 lb Ham bone with some meat on it
- 2 cups Dried split peas rinsed
- 1 large Onion chopped
- 2 large Carrots chopped
- 2 stalks Celery chopped
- 2 cloves Garlic minced
- 8 cups Chicken broth
- 2 teaspoon Salt or to taste
- 1 teaspoon Black pepper freshly ground
- 2 tablespoon Olive oil
1. Heat the olive oil in a large pot over medium heat. Add the chopped onion, carrots, and celery. Cook until the vegetables are softened, about 5-7 minutes.
2. Add the minced garlic and cook for another minute.
3. Add the ham bone, split peas, chicken broth, salt, and pepper. Bring to a boil, then reduce the heat and let it simmer for about 2 hours, or until the peas are tender and the soup has thickened.
4. Remove the ham bone from the pot. Shred any meat left on the bone and return the meat to the soup. Discard the bone.
5. Taste and adjust seasoning if necessary. Serve hot.
