Instructions
Heat oil in a large pot over medium heat. Add cumin seeds and let them splutter.
Add sliced onions, minced garlic, and ginger. Sauté until onions are golden brown.
Add chopped mixed vegetables and cook for 5 minutes.
Add rinsed basmati rice, turmeric powder, garam masala, and salt. Mix well.
Pour in water and bring to a boil. Reduce heat, cover, and simmer for 15-20 minutes until rice is cooked.
Fluff the rice with a fork and garnish with chopped cilantro before serving.
