Ingredients 

Main Ingredients

  • 2 cups Rice
  • 1 can Sardines in oil
  • 1 tablespoon Olive oil
  • 1 Onion chopped
  • 2 cloves Garlic minced
  • 1 cup Coconut milk
  • 1 teaspoon Salt
  • ½ teaspoon Black pepper
  • 1 Lime juiced
  • 2 tablespoon Cilantro chopped

Instructions 

  1. 1. Cook the rice according to package instructions.
  2. 2. In a pan, heat olive oil over medium heat. Add chopped onion and minced garlic, and sauté until fragrant.
  3. 3. Add the sardines (with oil) to the pan and cook for 3-4 minutes.
  4. 4. Pour in the coconut milk, and add salt and black pepper. Let it simmer for 5 minutes.
  5. 5. Mix the cooked rice into the pan with the sardines and coconut milk mixture. Stir well.
  6. 6. Squeeze lime juice over the rice and sardines. Garnish with chopped cilantro before serving.
