Instructions
Heat the vegetable oil in a wok over medium-high heat.
Add the minced garlic and stir-fry until fragrant.
Add the mixed vegetables and cook for 2-3 minutes.
Push the vegetables to the side and pour the beaten eggs into the wok. Scramble the eggs until cooked.
Add the cooked rice to the wok and stir everything together.
Pour the soy sauce over the rice and mix well.
Stir in the chopped green onions and cook for another 1-2 minutes.
Serve hot and enjoy!
