Kimchi Fried Rice Recipe
A quick and delicious Korean-inspired dish made with leftover rice and kimchi.

Main Ingredients
- 2 cups cooked rice preferably day-old
- 1 cup kimchi chopped
- 2 tablespoons kimchi juice
- 1 tablespoon soy sauce
- 1 tablespoon sesame oil
- 2 teaspoons vegetable oil
- 2 eggs beaten
- 2 stalks green onions chopped
- 1 teaspoon sesame seeds for garnish
Heat the vegetable oil in a wok or large skillet over medium-high heat.
Add the chopped kimchi and stir-fry for 2-3 minutes.
Push the kimchi to one side of the wok and pour the beaten eggs into the other side. Scramble the eggs until fully cooked.
Add the cooked rice, kimchi juice, soy sauce, and sesame oil. Stir-fry everything together for about 5 minutes.
Mix in the chopped green onions and cook for another minute.
Serve hot, garnished with sesame seeds.
