  • 1 cup Vegetable oil
  • 1 whole Egg
  • 1 tablespoon Lemon juice
  • 1 teaspoon Dijon mustard
  • ½ teaspoon Salt

Instructions 

  1. 1. In a blender, combine the egg, lemon juice, Dijon mustard, and salt. Blend for about 10 seconds.
  2. 2. With the blender running on low speed, slowly drizzle in the vegetable oil. Continue blending until the mixture thickens and emulsifies.
  3. 3. Taste and adjust seasoning if necessary. Store in an airtight container in the refrigerator for up to one week.
