Ingredients 

Main Ingredients

  • 4 pieces Chicken Breasts
  • 1 tablespoon Olive Oil
  • 2 cloves Garlic minced
  • 1 teaspoon Chili Powder
  • 1 teaspoon Cumin
  • 1 teaspoon Paprika
  • 1 teaspoon Salt
  • 0.5 teaspoon Black Pepper
  • 1 cup Tomato Sauce
  • 0.5 cup Chicken Broth
  • 1 cup Corn canned or fresh
  • 1 cup Black Beans canned, drained and rinsed

Instructions 

  1. 1. Heat the olive oil in a skillet over medium heat.
  2. 2. Add the chicken breasts and cook until browned on both sides, about 5-7 minutes per side.
  3. 3. Remove the chicken from the skillet and set aside.
  4. 4. In the same skillet, add the minced garlic and cook for about 1 minute.
  5. 5. Add the chili powder, cumin, paprika, salt, and black pepper. Stir to combine.
  6. 6. Pour in the tomato sauce and chicken broth. Stir well.
  7. 7. Return the chicken to the skillet and spoon some sauce over the top.
  8. 8. Add the corn and black beans. Simmer for 15-20 minutes, or until the chicken is cooked through.
  9. 9. Serve hot with your favorite sides.
