Instructions
Heat the oil in a large skillet over medium heat.
Add the rice and cook, stirring frequently, until golden brown.
Stir in the tomato sauce, chicken broth, garlic powder, onion powder, salt, and cumin.
Bring to a boil, then reduce heat to low and cover. Simmer for 15-20 minutes, or until the rice is tender and the liquid is absorbed.
Stir in the frozen peas and carrots, cover, and cook for an additional 5 minutes.
Fluff with a fork and serve warm.
