Mexican Shrimp Cocktail Recipe

Main Ingredients
- 1 lb Shrimp, cooked and peeled
- 1 cup Tomato juice
- ½ cup Ketchup
- ¼ cup Cilantro, chopped
- 1 Jalapeño, diced
- 1 Avocado, diced
- 1 Cucumber, diced
- ½ Red onion, diced
- 2 tablespoon Lime juice
- to taste Salt
- to taste Pepper
1. In a large mixing bowl, combine tomato juice, ketchup, lime juice, and salt and pepper to taste.
2. Add the cooked shrimp, cilantro, jalapeño, avocado, cucumber, and red onion. Stir gently to combine.
3. Chill in the refrigerator for at least 30 minutes before serving.
4. Serve in individual cups or bowls, garnished with extra cilantro and lime wedges if desired.
