Dry Ingredients
- 2 cups all-purpose flour
- 1 cup sugar
- 2 teaspoons baking soda
- 2 teaspoons ground cinnamon
- 0.5 teaspoon salt
Wet Ingredients
- 3 eggs large
- 0.75 cup vegetable oil
- 2 teaspoons vanilla extract
Add-ins
- 2 cups grated carrots
- 1 cup grated apple
- 0.5 cup raisins
- 0.5 cup chopped walnuts
Preheat your oven to 350°F (175°C). Grease a 12-cup muffin tin or line with paper liners.
In a large bowl, whisk together the flour, sugar, baking soda, cinnamon, and salt.
In another bowl, beat the eggs with the oil and vanilla. Stir into the dry ingredients just until moistened.
Fold in the carrots, apple, raisins, and walnuts.
Fill the muffin cups three-fourths full. Bake for 25 minutes or until a toothpick inserted in the center comes out clean.
Cool for 5 minutes before removing from the pan to a wire rack.
