Ingredients

  • 4 medium beets trimmed and washed
  • 1 cup vinegar
  • ½ cup sugar
  • 1 cup water
  • 1 teaspoon salt

Instructions 

  1. 1. Boil the beets in a saucepan until tender, about 30 minutes.
  2. 2. Peel and slice the beets.
  3. 3. In a separate saucepan, combine vinegar, sugar, water, and salt. Bring to a boil.
  4. 4. Place the sliced beets in jars and pour the hot vinegar mixture over them.
  5. 5. Seal the jars and refrigerate for at least 24 hours before serving.
