- 1 cup Sugar
- 1 cup Buttermilk
- 1 teaspoon Baking Soda
- 1 teaspoon Vanilla Extract
- 2 cups All-purpose Flour
- 1.5 cups Chopped Rhubarb
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large mixing bowl, combine sugar, buttermilk, baking soda, and vanilla extract.
Gradually add flour and mix until just combined.
Fold in the chopped rhubarb.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
