Ingredients

  • 1 rack lamb about 8 ribs
  • 2 tablespoon olive oil
  • 4 cloves garlic minced
  • 1 tablespoon rosemary chopped
  • 1 teaspoon thyme chopped
  • 1 teaspoon salt
  • 0.5 teaspoon black pepper freshly ground

Instructions 

  1. Preheat your oven to 450°F (230°C).
  2. Season the lamb with salt and pepper.
  3. In a small bowl, mix together olive oil, garlic, rosemary, and thyme.
  4. Rub the mixture all over the lamb.
  5. Place the lamb in a roasting pan, fat side up.
  6. Roast in the preheated oven for 25 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).
  7. Let the lamb rest for 10 minutes before slicing.
