Instructions
Preheat your oven to 450°F (230°C).
Season the lamb with salt and pepper.
In a small bowl, mix together olive oil, garlic, rosemary, and thyme.
Rub the mixture all over the lamb.
Place the lamb in a roasting pan, fat side up.
Roast in the preheated oven for 25 minutes for medium-rare, or until the internal temperature reaches 145°F (63°C).
Let the lamb rest for 10 minutes before slicing.
