Sausage Potato and Kale Soup Recipe

Main Ingredients
- 1 lb Italian sausage casings removed
- 4 cups chicken broth
- 3 medium potatoes peeled and diced
- 1 bunch kale stems removed, chopped
- 1 onion diced
- 2 cloves garlic minced
- 1 teaspoon salt to taste
- 0.5 teaspoon black pepper to taste
1. In a large pot, cook the sausage over medium heat until browned. Remove and set aside.
2. In the same pot, add the onion and garlic. Cook until softened.
3. Add the potatoes and chicken broth. Bring to a boil, then reduce heat and simmer until potatoes are tender.
4. Return the sausage to the pot and add the kale. Cook until kale is wilted. Season with salt and pepper to taste.
