She Crab Soup Recipe

- 1 cup Butter
- 1 cup All-purpose flour
- 1 quart Milk
- 1 pint Heavy cream
- 1 pound Fresh crab meat
- 1 teaspoon Salt
- 1 teaspoon Black pepper
- 1 teaspoon Old Bay seasoning
- 2 tablespoons Sherry
Melt the butter in a large pot over medium heat.
Whisk in the flour and cook for about 2 minutes.
Gradually add the milk and heavy cream, whisking constantly until smooth and thickened.
Add the crab meat, salt, pepper, and Old Bay seasoning. Stir well.
Reduce heat to low and simmer for about 20 minutes, stirring occasionally.
Stir in the sherry and cook for another 5 minutes.
Serve hot, garnished with additional crab meat if desired.
