Ingredients 

Main Ingredients

  • 1 lb Shrimp, peeled and deveined
  • 1 cup Shredded cheese
  • 8 Flour tortillas
  • 1 tablespoon Olive oil
  • 1 Bell pepper, diced
  • 1 Onion, diced
  • 1 teaspoon Cumin
  • 1 teaspoon Chili powder
  • to taste Salt and pepper

Instructions 

  1. 1. Heat olive oil in a skillet over medium heat.
  2. 2. Add diced onion and bell pepper, cook until soft.
  3. 3. Add shrimp, cumin, chili powder, salt, and pepper. Cook until shrimp is pink.
  4. 4. Remove shrimp mixture from skillet. Wipe skillet clean.
  5. 5. Place a tortilla in the skillet, sprinkle with cheese, add shrimp mixture, and top with another tortilla.
  6. 6. Cook until golden brown on both sides and cheese is melted.
  7. 7. Repeat with remaining tortillas and filling.
  8. 8. Cut into wedges and serve warm.
