Main Ingredients
- 6 cups potatoes, peeled and diced
- 1 cup onion, chopped
- 3 cups chicken broth
- 1 cup heavy cream
- 1 teaspoon salt
- ½ teaspoon black pepper
- 2 tablespoon butter
1. Add potatoes, onion, and chicken broth to the slow cooker.
2. Cook on low for 7-8 hours or until potatoes are tender.
3. Use an immersion blender to blend the soup until smooth.
4. Stir in heavy cream, salt, pepper, and butter. Cook for an additional 30 minutes.
5. Serve hot and enjoy!
