Main Ingredients
- 2 cups grated summer squash
- 3 cups all-purpose flour
- 1 cup sugar
- 1 teaspoon baking powder
- 1 teaspoon baking soda
- 1 teaspoon salt
- 1 teaspoon ground cinnamon
- ½ teaspoon ground nutmeg
- 3 large eggs beaten
- 1 cup vegetable oil
- 2 teaspoon vanilla extract
Preheat your oven to 350°F (175°C). Grease a loaf pan.
In a large bowl, combine the flour, sugar, baking powder, baking soda, salt, cinnamon, and nutmeg.
In another bowl, mix the grated summer squash, beaten eggs, vegetable oil, and vanilla extract.
Combine the wet ingredients with the dry ingredients and stir until just combined.
Pour the batter into the prepared loaf pan.
Bake for 60 minutes or until a toothpick inserted into the center comes out clean.
Let the bread cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
