Ingredients

  • 4 cups sliced summer squash
  • 1 cup shredded cheddar cheese
  • 1 cup sour cream
  • 1 cup crushed crackers
  • 1 medium onion, chopped
  • 2 tablespoon butter
  • to taste salt and pepper

Instructions 

  1. Preheat oven to 350°F (175°C).
  2. In a large pot, boil sliced squash until tender, about 5 minutes. Drain well.
  3. In a large mixing bowl, combine squash, onion, sour cream, and half of the shredded cheese. Season with salt and pepper.
  4. Pour mixture into a baking dish. Top with remaining cheese and crushed crackers. Dot with butter.
  5. Bake in preheated oven for 25-30 minutes, until the top is golden brown and bubbly.
