Main Ingredients
- 4 cups Chicken broth
- 1 cup Mushrooms, sliced
- 2 stalks Lemongrass, cut into 1-inch pieces
- 3 slices Galangal
- 2 leaves Kaffir lime leaves
- 2 tablespoons Fish sauce
- 1 tablespoon Lime juice
- 2 small Red chili peppers, chopped
- 200 grams Shrimp, peeled and deveined
- 1 cup Cherry tomatoes, halved
- 1 cup Coconut milk
- 1 handful Cilantro, chopped
1. In a pot, bring the chicken broth to a boil.
2. Add lemongrass, galangal, and kaffir lime leaves. Simmer for 5 minutes.
3. Add mushrooms and cook for another 5 minutes.
4. Add fish sauce, lime juice, and chili peppers. Simmer for 2 minutes.
5. Add shrimp and cook until they turn pink, about 3 minutes.
6. Add cherry tomatoes and coconut milk. Simmer for another 2 minutes.
7. Remove from heat and garnish with chopped cilantro before serving.
