Traditional Mexican Molletes
Molletes are a traditional Mexican open-faced sandwich, typically served for breakfast or as a snack. They are made with bolillo rolls, refried beans, cheese, and salsa.

- 4 Bolillo rolls
- 1 cup Refried beans
- 1 cup Shredded cheese (like Oaxaca or Monterey Jack)
- ½ cup Pico de gallo or salsa
1. Preheat your oven to 350°F (175°C).
2. Slice the bolillo rolls in half lengthwise.
3. Spread a layer of refried beans on each half of the rolls.
4. Sprinkle shredded cheese over the beans.
5. Place the rolls on a baking sheet and bake in the oven for about 10 minutes, or until the cheese is melted and bubbly.
6. Remove from the oven and top with pico de gallo or salsa.
7. Serve immediately and enjoy!
