Ingredients

  • 4 eggs
  • 1 cup Greek yogurt
  • 2 cloves garlic, minced
  • 2 tablespoon butter
  • 1 teaspoon paprika
  • 1 teaspoon red pepper flakes
  • to taste salt
  • to taste pepper

Instructions 

  1. 1. Bring a saucepan of water to a gentle simmer. Add a splash of vinegar.
  2. 2. Crack the eggs into small bowls and gently slide them into the simmering water. Poach for 3-4 minutes.
  3. 3. In a mixing bowl, combine Greek yogurt and minced garlic. Spread the mixture on serving plates.
  4. 4. In a skillet, melt the butter and add paprika and red pepper flakes. Cook until fragrant.
  5. 5. Place the poached eggs on the yogurt mixture and drizzle with the chili butter. Season with salt and pepper.
