Ingredients 

Main Ingredients

  • 1 tablespoon Olive Oil
  • 1 Onion, chopped
  • 2 cloves Garlic, minced
  • 2 Carrots, sliced
  • 2 Celery stalks, sliced
  • 1 Zucchini, chopped
  • 1 can Diced Tomatoes
  • 4 cups Vegetable Broth
  • 1 teaspoon Dried Thyme
  • 1 teaspoon Dried Basil
  • to taste Salt and Pepper

Instructions 

  1. Heat the olive oil in a large pot over medium heat.
  2. Add the onion and garlic, and sauté until softened.
  3. Add the carrots and celery, and cook for another 5 minutes.
  4. Stir in the zucchini, diced tomatoes, and vegetable broth.
  5. Add the thyme and basil. Season with salt and pepper to taste.
  6. Bring to a boil, then reduce heat and let it simmer for 20 minutes.
  7. Serve hot and enjoy!
