- 1 tablespoon Olive oil
- 1 medium Onion, diced
- 2 cloves Garlic, minced
- 1 lb Chicken breast, cooked and shredded
- 2 cans Great Northern beans, drained and rinsed
- 2 cups Chicken broth
- 1 can Diced green chilies
- 1 teaspoon Ground cumin
- 1 teaspoon Dried oregano
- 1 teaspoon Ground black pepper
- 0.5 teaspoon Salt
- 1 cup Sour cream
- 0.5 cup Heavy cream
Heat olive oil in a large pot over medium heat.
Add diced onion and cook until translucent, about 5 minutes.
Add minced garlic and cook for another minute.
Add shredded chicken, beans, chicken broth, green chilies, cumin, oregano, black pepper, and salt. Stir well to combine.
Bring to a boil, then reduce heat and simmer for 20 minutes.
Stir in sour cream and heavy cream. Cook for another 5 minutes until heated through.
Serve hot, garnished with your favorite toppings like shredded cheese, chopped cilantro, or avocado slices.
